Sweet Potato and Ginger Slaw

1/4 c. vegetable oil |
1/4 c. lime juice |
1-1/2 Tbsp. sugar |
1-1/2 tsp. grated fresh ginger |
1/2 tsp. salt |
1-1/2 lb. sweet potatoes, julienned or coarsely grated (about 5-1/2 c.) |
1/2 c. toasted walnuts pieces |
1/4 c. sliced scallions |
Directions:
1. In large bowl, whisk together oil, lime juice, sugar, ginger and salt.
2. Stir in sweet potatoes, walnuts and scallions.
3. Chill before serving.
